Ukkarisida akki rotti roti made by using washed & dried rice flour in different method,this kind of rotti usually prepared in coorg as i know becaz i have tasted this kind of roti when i went to coorg,this kind is prepared in many ways means by adding other ingredients like cooked rice,masalas ....here i prepared as usual simple plain rotti.
ingrediants;
Rice flour 1 cup ( washed & dried & powdered) or u can use regular rice flour too.
Salt as needed
2 tbsp of oil
2 cups of water
Method:
1. Bring water for boiling by adding salt & oil.
2. When it comes to boiling add rice flour & make flame to sim & cook for 5-8 minutes.
3. Now take a spatula & mix tye rice flour briskly until all flour covers with water & comes to dough condition.
4. Now remove from fire & leave it to cool,it should come to room temperature means it should not be too hot or cold.
5. Take the dough in a plate & start kneading until it becomes smooth & soft dough & cover with damp cloth & keep.
6. Now heat tava & take medium size dough ball & start rolling by adding rice flour if needed or you can even pat in your hand too.
7. Make medium sized roties & cook both the sides .no need to smear oil.
8. Serve hot roti with any side.
Notes; 1. Another method is you can add left over cooked rice ( grind to smooth paste before adding) to the cooked rice flour & knead it to soft dough it will also become very soft roti.
2. One more method is while water is boiling u will add oil & salt with that add green chill,coconut,coriander leaves or pudina paste & add little jeera & leave to boil & next same prociger as above this will be masala roti
3. After cooking on tava you cook on flame directly as you make pulkas too.
