MAVINKAI GOJJU


Mavinkai means raw mango where this kind of mango is used to prepare many dishes now a days this is also one of the south indian apatizer or served with rice or chapathi any thing & from this mavinakai not only gojju you can make chitranna,rasam etc.,here normally raw & sour mango is used which is made in two types in one type we use little ripe type but sour mavinakai & in another type we use raw & sour,here i made second type where completely raw one i have used....


Ingrediants;

1 medium size of raw mango which is sour in taste cut in to pieces
3/4 cup or little less than coconut grated
Salt
Pinch of mustered seeds
4-5 red chillies or as per taste
1/4 tsp of jeera
Pinch of methi seeds
1 tsp or little more of rice flour ( for thickening)
2-3 or more tbsp of jaggary

Seasoining;
1 tbsp of ghee
1/2 tsp of jeera & mustered seeds
1 red chilli
Few curry leaves
Asafatida pinch ( optional)

Method;

1. Grind mavinakai,coconut,redcchillies,mustered seeds,jeera,methiseeds & rice flour to little coarse or smooth paste.

2. Now heat ghee in a vessal and make seasoining & add grinded masala & add sufficiant water it should be not very thin & not too thick also it should be in right consistancy.

3. Bring to boil ,boil until raw smell dissappears,now add salt and jaggary,& mix here jaggary is added more because it is sour in taste so adjust for your taste.

4. Boil few more minutes & remove & serve hot with rice.
