Aloo subji or curry or potato curry anything... Is very tasty & easy to make which can be served with poori,chapathi,dosa idlies etc....
Ingrediants;
4-5 medium potatoes boiled until soft
2 small onions or one medium big onion finely chopped
For seasoning;
1 tsp oil & 1 tsp ghee
1 tsp jeera or sha jeera
1 tsp ginger garlic paste
1 bay leaf
1 clove
1/2" cinnamon
1 small cardamom
Others;
Salt as per taste
1/2 tsp of sugar
Little less than or 1 tbsp red chilli powder
1/2 to 3/4 tsp of garam masala
1 tsp of corriander seeds
1/2 tsp of jeera powder
4-5 cashews soaked in water & grinded to paste
1/4 cup of curds
1/4 cup of water
Kasuri methi for garnishing
Method;
1. Boil potatoes & cube it & keep.
2. Grind soaked cashews & keep ready.
3. Chop onions finely & keep.
4. Heat oil & ghee in a pan & add all ingrediants under seasoning & fry.
5. Then add chopped onions & fry until transparent.
6. Then add boiled & cubed potatoes & mix.
7. Now add one by one masalas & mix well add salt and sugar too & also curds & water & mix and leave it to boil.for few minutes..
8. Now add grinded paste of cashews & mix and boil for few more minutes & it starts little thickening.
9. Now remove & garnish with kasuri methi .
10. Serve hot.
