Carrot kheer orcarrot payasa ,normally we were preparing only gasagase payasa,vermicelli kheer like that but now a days all wer trying to prepare many kinds of kheer orpayasa.here i tried preparing kheer using carrot,it is very easy and very tasty too....
Ingrediants;
1/2 kgor 3-4 medium big size carrots skin removed and finely grated.
Sugar as per sweetness ormeasure the gratedcarrot & measure sugar same or littleless & add.
Milk upto 1/2 letre or kheer consistency or little more or less.
1/4 tsp of cardamom powder
2 tbsp of ghee
Dry fruits 1 tb sp
4 cashews,4 badam soaked in milk or water
( grind into smooth paste or little coarce)
Pinch of safron or safron color
Method;
1. Remove skin grate carrot & keep.
2. In a pan heat ghee & fry grated carrot until it is partially cooked & until color is changed to pale & it squeezes little.
3. Now add milk ( pour 1/2 of the milk) & mix & leave it cook.( be mixing frequently)
4. Grind soaked dry fruits into coarse paste if you like little crunchy dry fruits to have otherwise grind it into smooth padte & keep.
5. When carrot is cooked fully add remaining milk ( it should not be too watery or thick) & add safron & cardamom powder & suger & mix & leave it boil until sugar dissolves.
6 lastly add dry fruit paste & mix & leave it to boil for few seconds here it brcomes little thick then if you feel you can add little more milk .
7. Now seasion with roasted dry fruits & mix.
8. Serve hot or cold.
