Dhokla is a gujrathi dish or snack or have it in breakfast normally made with gram flour and now we can make by using semolina too,both are tasty & spongy & very easy to make.i got this recipe from one blog & tried out.made little change here and there,it came out very well.
Ingrediants;
1&1/2 cups of besan or gram flour
1 tbsp medium rava
2-3 green chilies made paste ( or as per spicy)
1/2 to 1 tsp ginger paste
1/4 tsp sugar
Salt as per taste
1 tsp or little more lemon juice
Water as required or batter should be not too watery but still it should be almost like idli batter
Pinch of turmeric ( optional)
2 tsp eno fruit salt.
Seasoning;
2 tbsp oil
1 tsp mustered seeds
1 tsp cumin seeds
Curry leaves few
Coriander leaves for garnish
1-2 green chillies finely chopped
1 tsp lemon juice ( optional)
1 tbsp grated coconut ( optional)
Method;
1. In a wide bowl take gram flour,chiroti rava,& mix without lumps & add salt,sugar,green chilli & ginger paste,turmeric if adding,lemon juice & mix well & add little by litte water & start mixing without any lumps & batter should be like idli batter now add eno fruit salt & mix briskly & pour to greased plate & then keep in idli cooker & steam for 10-12 minutes or until done ,if you insert tooth pick it should come out clean.
2. Keep it for cooling.
3. Other side heat oil in a pan & add all seasonings & fry then add 1/4 cup of water &( pour after switch offing the flame& be care ful) & keep aside.
4. Now remove the cooled dhokla on a plate & pour evenly the seasoning & press with a spoon lightly & cut into pieces & serve with green chutney.
