PALYA BUN

Palya buns or stuffed buns or masala buns or potato buns whatever name you want you can call,these buns is famous in iyengari bakeries in bangalore,i was always bringing this becaz my daughter likes this bun very much,before i tried baking,so today i thought of preparing this bun & was searching for recipe & got this from one of the blog & tried it came out very tasty & my daughter liked it 😋😀


Ingrediants

Maida or all purpose flour 1 & 1/2 cups
Water 1/4 cup & little more
Milk 1/4 cup
Sugar 1 tbsp
Salt 3/4 tsp
Oil 3 tbsp
Active dried yeast 3/4 tbsp

Stuffing;

Potato 1 medium large or two small
Onion 1 big
Carrot 1 or two
Beans few
Peas 1/4 cup
Corn less than 1/4 cup
Curry leaves few
Coriander leaves few
Salt as per taste
Pinch of sugar
Pinch of turmeric
1 tsp red chilli powder
1or 2 green chillies
1/4 tsp or little more garam masala
1 tsp lemon juice
1/2 tsp jeera
1/2 tsp ajwain
Oil 1 tbsp for seasoning

Method;

For dough;

1. Take warm milk & dissolve sugar & add yeast & mix & keep covered for 10 minutes & it will  be dissolved & looks like froth.

2. In a wide bowl take all other ingredients & mix then add yeast mixture & add little by little water & knead to soft & pealable dough & knead it for 10 to 15 minutes until soft & non sticky .

3, cover and keep it in warm placefor raising for 1 & 1/2 hrs.


For stuffing ;

1. Chop all vegitables finely & cook except onion until soft.

2. In a pan heat oil & add jeera & ajwain & fry then add curry leaves ,green chillies & onions & fry until it changes its colour & add other cooked veggies & mix and add salt,sugar,garam masala & red chilli powder & mix throughly tyen add lemon juice & mix & garnish with coriander leaves & keep it to cool.

Dough;

1. After 1&1/2 hrs the dough will be raised & take it out & put some dry flour on counter top & punch tye dough & knead ut for 6-8 minutes & make equal size ball & arrange in a baking tray & cover & keep it for second rise for 1/2 hour,

2. After 1/2 hr take one ball of dough & flat it on your palms & stuff with curry ( 1 or 2 spoons) & cover all side and roll gently on your palms & arrange on greased baking tray,in the same way stuff all other dough balls & keep .cover & leave it rise more for another 1/2 hr.

3. Meanwhile pre heat oven at 190 dig cent., for 8 minutes.

4. Bake the buns in pre heated oven for 17 to 20 minutes or until it starts changing colour to golden brown.

5. Remove & cool & enjoy with tea or ciffee.

Notes ;

1. Before baking brush the buns with little milk or butter it makes buns sift & golden colour.

2. In my iven i baked in 175 dig cent., it may differ in each & every oven .
