INSTANT RAW MANGO PICKLE

Instant pickle or didir uppinakai in kannada we call,it is very tasty and very easy to prepare,normally mango pickle or any other it takes time to prepare but this one  within one day soaking in salt & next day mixing with red chilli powder & making seasoning that's all immediately you can have it it can be served with any dish or with curd rice it will be very tasty to eat with curd rice.


Ingrediants;
1 medium large rawmango ( not too sour) cut into very small pieces

Salt as needed ( rock salt) for this upto 1 tbsp or little more

1 & 1/2 tsp or as per spicy red chilli powder

For tadka:

1 tbsp oil
1/2 tsp mustered seeds
1/4 tsp methi seeds

Method;

1. Firstly,wash mango & dry it completely & remove if any water is left.

2. Next cut into small pieces & take in bowl

3. Mix with salt & mix throughly & cover it tightly in air tight jar & keep it aside for one day or 2 days but be mixing often..

4. Next day if you remove andmix you can see it has left some water in it but don't throw it let itbe & now add chilli powder & mix & leave for few hrs & make seasoning & mix well & store it in air tight jar & use whenever you want.

5. But keep it refrigerator when you are not using.
