EGGLESS VANILLA CAKE WITH CHICKPEA FLOUR

Everyday i will be searching for eggless recipes,that too cakes,actually i am not satisfied with eggless cakes which i have seen & done ,i am not telling that they are not good but i am not fully satisfied but few days back also i got one recipe for eggless vanilla cake & i did it ( i have posted the recipe) ya it came out very well.today i tried one recipe that is vanilla cake with egg where i replaced eggs with chickpea flour or besan or kadalehittu .this egg replacement i got from one of the blog & i tried on my own with the recipe of cake with eggs.yes it was hit for me.it came out good & tasty.so friends i think without worry you can use chickpea flour to replace eggs,sure i will be trying more recipes if cake with egg & other replacements,i will post those recipes.

Ingredients;

3 cups of all purpose flour or cake flour
1&1/2 tbsp baking powder
1/2 tsp salt
1 cup unsalted butter plus little more
1 & 1/2 cup granulated or fine sugar
2tsp vanilla extract
1 cup milk ( room temp.,)
12 tbsp of chickpea flour & 12 tbsp of water

Method;
1. Pre heat the oven at 180 dig for 8-10 mins.& grease a cake mould & keep ready.

2. In a bowl beat butter & sugar until sugar dissolves & looks creamy.then in a separate bowl take chickpea flour with water & mix to smooth & creamy paste without any lumps & add to butter & sugar mixture & mix well & add baking powder & mix well for few minutes or until it looks frothy like & small bubbles forms.then live it for 2-3 minutes & add vanilla extract & mix.

3. Sift the flour & keep milk ready.

4. Now start adding little by little flour & milk in 3 batches & start folding the mixture.don't mix vigoursely .   Make a soft batter & pour into greased cake pan ( upto 1/2 of the pan) .& make it even.

5. Bake in preheated oven for 20-28 minutes ( it depends on oven) or until if the tooth pik is inserted comes out clean.

6. Remove & leave it to cool.after completely cooled remove from pan & cool it completely before slicing.

7. Store in air tight container.
Note;
1. For cake flour take 1 cup ( don't press tightly while filling) all purpose flour & remove 2 tbsp of flour & replace that two tbsp with 2 tbsp of corn flour or corn starch.there your cake flour is ready.

2. Chickpea flour or besan should be first mixed nicely with water & then mixed with butter mixture.
