CORN CUTLETS

Cooking time 3-4 minutes ( 1 cutlet)
Corn cutlet or jolada vada is made by using corn kennals,binding with potato mixture,which is very tasty & easy to make,it is quite difficult to cover potato after stuffing but okay no problem you can do it. 😊.this cutlet or patties is mixture of corn with spices & also boiled potato with mixture of
spices.this cutlet should be made in rainy or cold season & serve with hot hot tea or coffee,ha ha what a combination 😄 .asusual i was browsing in fb., there i saw. This recipe so thought to give a try,so here it is.

Ingredients:
For outer cover;

2 medium boiled & finely mashed potato
Salt as per taste
1tsp red chilli powder ( adjust as per taste)
1 tsp coriander powder
1/2 tsp cumin powder
1 tbsp corn flour or rice flour or besan ( i used corn flour)

For stuffing;

1 cup corn ( frozen or fresh corn boiled until soft)
1& 1/2 tsp red chilli powder
Salt as per taste
Green chilli 1-2 ( optional)
1 tsp chat masala
1 tbsp finely chopped coriander leaves
1 tsp lemon juice
1 tsp grated ginger/ ginger powder/ ginger paste

Method;

1. Boil potatoes & remove skin & smash without any lumps,take it in a plate or bowl & add all things given under outer cover & mix well without any lumps & keep ready covered.

2. If you are using frozen corn then remove from freezer & keep it in microwave safe bowl & heat it @ low temperature for  few seconds & remove,if you are using fresh one add it to boiling water & boil for few minutes or until it becomes soft to handle.

3. Take corn in a bowl & add all things given under stuffing & mix nicely.check once by tasting.

4. Heat a pan with some oil for shallow frying of cutlets ( on medium flame)

5. Make equal balls from potato mixture & keep.

6. Take one ball of potato mixture & flat it on your palms & fill with 1 spoon of corn mixture & cover the potato dough completely & flat it by pressing by your palm.

7. Shallow fry one by one or two @ a time turning both the sides until it turns golden colour.

8. Serve hot with green chutney with coffee or tea & enjoy.

Notes:1. adjust the taste & add if you want more.
           2. You can slightly coarse grind the corn before mixing.
           3. If you can't cover potato mixture in one go properly then after stuffing take another small mixture of potato & flat it with your fingers & put it on top of the stuffed potato mixture & press the sides neatly thet stuffing doesn't comes out & lightly press in palms.
