HAGALAKAI GOJJU


                                                             ಹಾಗಲಕಾಯಿ  ಗೊಜ್ಜು
Prep., time: 10 minutes
Frying time 15 minutes
Cooking time ; 10-12 minutes
Hagalakai means Bitter gourd,the vegetable which has too much bitterness by its nature,it is very healthy vegetable,it is healthy for diabetic patients, normally,people don't like this vegetable for it's bitterness,& we can make curry,stuffed curry,sambar & gojju which i have prepared today.but one consuming thing is time of frying it takes little longtime,because to remove little bitterness of the vegetable & next process are all very easy.this can be served with plain rice or as side for idli,dosa,roti etc.,

Ingredients ;

1 cup finely chopped bitter gourd soaked in water which has a pinch of turmeric & little salt
1&1/4 tsp of rasam powder
Salt as needed
Jaggery little more than medium size of lemon
Sesame seeds 1/2 tsp fried ( white/black)
Tamarind medium lemon size soaked in 1 cup water

Tadka:
2-3tbsp of oil
1 tsp mustered seeds
Curry leaves
Dry red chilli 2 broken

Method;

1. In a pan heat oil &  make tadka & add add chopped bitter gourd & fry until it changes its colour & becomes little squeezed ( do not use soaked water) ( means it becomes small in size from the original size) it takes approx., 15 minutes

2. Then add  soaked tamarind water if u need add little more water & live it to boil until bittergourd is cooked fully,

3. Then add rasam powder,salt & jagerry & mix well & live it to boil for few more minutes until the consistency is right means not too liquid or not too thick.

4. Then add roasted seseme or till seeds & mix & switch off the stove.

5. Serve hot with rice.

6. You can store in airtight container for 2-3 days or you can carry it with you for trip or tour.
