CARROT OBBATTU


                                                                 ಕ್ಯಾರಟ್ ಒಬ್ಬಟ್ಟು

Carrot obbattu !! I know you are surprised,ya even i was surprised when i heard about this,what, we know bele obbattu,sakkare obbattu but what is this carrot obbattu? actually,this was told by my mother,that she saw in tv cooking prog., oneday,this prep., of carrot obbattu or holige. If we see her preparing it looks great why can't you try once,i said ok but thinking what to do,at last i decided to prepare today for this Navaratri Festival,so i prepared finger cross,oh it came out very well & tasty,even my husband liked.but one thing i want to say is it is little tricky of rolling,but otherwise
same to same.


Ingredients;
For stuffing/ hoorana

2 cups grated carrot ( thinly grated)
1 cup jaggery grated
2 pods of elachi or cardamom
1/4 cup grated fresh coconut ( thinly grated)
1 tbsp of khus khus or gasa gase
1tbsp ghee for frying carrot.

For outer cover; kanikya ;

2cups of wheat flour
1 cup maida flour ( all purpose flour)
1 tbsp ghee
Pinch of salt
Pinch of turmeric powder
Water as needed for making dough

Method;

A. Preparation of kanikya/outer cover.

1. In a wide bowl take all things given under preparation of outer cover & mix in your hands then add little by little water & start kneading & make into soft dough like chapathi dough & it should be little
more softer than chapathi dough & cover & keep aside.

B. Preparation of hoorana/stuffing.

1. In a pan heat ghee & fry khus khus & add grated carrot & fry until it is cooked & changes its colour.

2. Then add grated jaggery ,cardamom & coconut & mix,jaggery starts melting so mix the mixture until it comes together like a dough form.then remove & live to cool.

3. Take a rolling board & pin & make equal balls of dough & stuffing,

4. Take one ball of dough & roll into small disc & keep the stuffing in the middle & cover like modak
 all the sides tightly.

5. Dip in dry wheat flour & roll like chapathi.( here it is little difficult & little tricky because stuffing may come out little so roll bit careful)

6. Heat tava & cook rolled obbattu both the sides by brushing ghee till dark spots appears.

7. Serve hot with putting ghee on top ( optional)

Another method;

1. Cook carrot & grind ( after cool) with other ingredients

2. In a pan heat little ghee & pour the grinded mixture & mix until it forms like a dough or comes together .( here fry seprately khus khus with little ghee & then add grinded mixture & start mixing)

3. All other things are same.

Note; 1. You can use sugar instead of jaggery.
