PAVKAI/BITTERGOURD/HAGALAKAI PITLAI/SAMBAR



This dish is traditional southindian dish which is served as side dish or with rice,it is made by using bittergourd,this bittergourd is used for making gojju,curry etc., it is very bitter in taste & if it is not done properly the bitter taste will not go,normally,so many people don't like this vegetable because of its bitterness,but it is very very healthy.
Ingredients
Bitter gourd – 3 Nos (Medium size)Black Pepper – 1 teaspoon
Thuvar dhal – ½ cupJeera-1 teaspoon
Grated Coconut -1/2 cupTurmeric powder – ½ teaspoon
Tamarind – small lemon size ballsalt-2 teaspoon
Red chillies long – 4 NosGingelly Oil – 1 tablespoon
Coriander Seeds – 2 tablespoonMustard – ½ teaspoon
Urad dhal-1 teaspoonCurry leaves - few
Bengal gram dhal - 3 tablespoon
Method

Slit the bitter gourds and remove the seeds. Cut it into small pieces. Sprinkle little salt and turmeric mix well. Keep it aside.

Soak  tamarind in water and squeeze out the juice by adding 3 cups of water little by little 

. Pressure cook the thuvar dhal till soft.

In  a kadai put a teaspoon of oil and roast Bengal gram dhal, urad dhal, coriander seeds, pepper, jeera and red chillies seaparately. Add coconut gratings at the end and fry for a while. Remove and cool. Mix all the roasted ingredients and fried coconut grating and grind to a fine paste

Heat two table sppon oil & add cut bitter gourd ( squeeze if water is there) & fry until it is little bit cooked,( it starts to change color to little brown,it starts to shrink) then add soaked tamarind water
& keep to boil,when the bitter gourd cooked completly ,add grinded paste & cooked dal & mix then add salt & jaggry let it to boil for some more minutes.remove.

Make seasoning with oil,mustered seeds ,red chilli & curry leaves & add to sambar.

Serve hot with rice.
