PATHIRI

ಪತ್ತಿರಿ /ಉಕ್ಕರಿಸಿದ ಅಕ್ಕಿ ಹಿಟ್ಟಿನ ರೊಟ್ಟಿ
Pathiri is kerala dish it is a rotti like made by ,it is from north malabar of kerala state.this dish is made by home made rice flour or store bought idiyappam      Flour or pathiri flour,it is very soft roti,which should be served with any spicy side dish,becaz it totally bland which contains only salt & oil.but it is too soft & tasty......








Ingredient

1 cup rice flour or idiyappam or pathiri flour
1 cup water ( 1:1)
Salt little for taste
Oil 1 tbsp

Method

Bring water to boil in a vessel adding salt & oil.

When it starts boiling pour the flour & live for 2 minutes on low flame.

Then mix using a spatula or spoon quickly that the bottom should not  burn

Keep on sim for 2 minutes closed with lid

Switch off the flame.

Take the dough on a plate & start kneading ( when you knead when it is hot it becomes more smooth)
If it too hot to handle smear some oil on your hand & knead until it becomes non sticky & smooth ( approx..,3-4 minutes)

Then make medium size balls & start rolling with chapathi roller or press in happala or pappad
presser,& keep do the same with remaining dough.

Heat a pan & start cooking the rotties one by one.

When you put roti on pan keep on rotating or turning the roti that it will not burn & flip the roti to other side & press with a kitchen towel or backside of a spoon that rotti puffs up,again flip & do same thing,this process will be 1-2 minutes when it lightly starts browning remove from tava,( rotti should be in white colour)

Serve hot with any spicy gravy you wish.

Note;

If you are bore to eat like that only,spread some tomato sauce & spread with your favourite vegetables & roll & serve as like tortilla role or chapathi role kids will like this type very much.
