ALOO PALADA

                                                                 ಆಲೂ ಪಲ್ಲದ

Friends,today i am posting HImachal Pradesh recipes,yesterday i was thinking about this,why not to start trying different states recipes,from this we will come to know what they prepare,& then the taste & things they use.here i am posting 'pahari food' it is small cuisine in Himachal Pradesh,here 'pahari' means 'mountains'.'pahari aloo palada ' is potatoes in yogurt gravy.this is yogurt gravy based dish,with this i tried another dish ,'babru' from same cuisine .it is our poori like which is stuffed with uraddal paste! Interesting na,this recipe i will post next,so now we talk about aloo in yogurt gravy,it is very easy to make & in my home everyone liked it,so here it is....
Ingredients

1 big  potatoe,peeled and chopped into finger fries

1 medium onion sliced

1 black cardamom ( u can put green also)

1 /2" of cinnamon

2-3 cloves

1 teaspoon cumin seeds.

Pinch of hing ( asafoetida)

1 tbsp ghee for tampering

1tablespoons of raw rice and 1 or 2 green cardamoms (grind with with little water ) ( soak rice for few minutes before grinding)
1/4 tsp turmeric powder

1&1/2 cups of yogurt whisked ( if needed add more)

Salt as needed

Sugar little ( optional)

Coriander leaves for garnishing

Others

1/2 tsp coriander powder
1/2 tsp garam masala
1/4 tsp turmeric powder


Method


Heat 2 tablespoons of ghee.

Add cardamom,cinnamon bark, cloves, pinch of hing and cumin seeds.

Add the sliced onions

Add coriander powder,turmeric, garam masala and salt.

Add the potatoes and mix well.

Cover and cook on medium heat for till potatoes are almost cooked.

Mix the ground rice with the whisked yogurt.

Add the yogurt mixture to potatoes and keep stirring on medium heat till the gravy comes to a boil.

Let it boil  for 5 minutes.

Garnish with coriander leaves & serve hot with rice,poori,chapathi etc.,

Note: if you want half cook the potatoes, & add.
