VANGIBHATH OR BRINNJAL RICE



ವಾಂಗಿಭಾತ್ ,or vangibhath or brinjal rice,this rice is karnataka special,mixture of cooked brinjal with freshly grounded masala powder or vangibhath powder prepared before & stored.this rice is very tasty,many people prepare this in different methods.usually, i was also using stored powder & making vangibhath,but today when I was browsing i got one recipe so i thought i will try this,& i made little varitions & cooked but it came out very well.
Ingredients
Brinjal 1/2 kg ( cut into length wise thinly)
Cooked rice 1 cup
Turmeric pinch
Salt as needed


Roast & powder

Channa dal 1 tbsp
Urad dal 1 tbsp
Coriander seeds 1 tbsp
Dry red chillies 5-6 or as per spicy
Oil 1 tsp
Hing pinch ( optional)
Sesame seeds ( yellu) 1/4 tsp
Grated coconut or dry coconut 1/4 cup
Curry leaves 1 string

For tempering

Oil 2 tbsp
Mustered seeds 1 tsp
Peanuts 1/4 cup
Channa dal 1/2 tsp
Urad dal 1/2 tsp
Dry red chilli 2-3 broken
Curry leaves 1 string

Method

Keep ready cooked rice ( spread it on a thali,& sprinkle some oil that they do not stick to each other)

In a pan heat oil & add all things given under tempering,& fry until golden brown the add cut length wise brinjal & mix sprinkle tamrind water & mix & cover & cook on medium flame until brinjal is cooked it should not be mushy ,keep aside.

Roast adding oil all things given under roast & grind into fine powder with ciconut.

Add this powder to cooked brinjal curry & keep on sim & mix throughly then add salt,sugar ( optional) & mix well that every thing is finely incorporated.

Serve hot with any raita,here i have prepared cucumber bajji/ raita ( see recipe in varieties of raita)
