ಮಂಡಕ್ಕಿ / ಕಡಲೆಪುರಿ ಉಸಲಿ / ಉಪ್ಪಿಟ್ಟು / upma ,this is from karnataka,usually this upma is made by the puri or mandakki or puffed rice which we get in davangere & surroundings,i think nowa days you get every were ,you ask shop keeper that to give mandakki puri ( davangere side) ,in b'lore you get in gandhibazar where the shop has different varieties of puffed rice. You can eat this puri like that only or you can have like upma or simple seasoning ( kadlepuri oggarane)) today i made upma or usli ...
Ingredients
2 cups mandakki or puffed rice
1 big onion chopped
Tempering
Oil 1 tbsp
Mustered seeds 1 tsp
Channa dal 1 tsp
Urad dal 1 tsp
Green chillies 5-6
Curry leaves
Salt
Sugar ( optional)
Turmeric powder 1/2 tsp
Others
Lemon juice 2 tbsp
Coriander leaves for garnishing
Method
Heat oil in a wide pan & add all seasonings & fry then add chopped onions & fry until golden brown or it is transparent add turmeric powder & mix & keep the flame sim,
Now take a wide bowl with 3/4 of water in it & put some puffed rice or mandakki to it & press gently ( not too force) that all mandakki should soak in water & immediately Take out the mandakki & squeeze extra water in it tightly & put into pan which have seasoning ( do not live mandakki in water for long time becaz if it soaks too much upma will be mushy) & mix adding salt,sugar throughly,
Then lastly , add lemon juice ( you can add more) & mix,garnish with coriander leaves.
Serve immediatly.( do not keep for long time other wise it becomes soft)
