ಒತ್ತು ಶಾವಿಗೆ or ottu shavige or vermicelli,or noodles any name you can call this,usually this dish is every ones favorate this is from karnataka state,this dish nowadays everyone prepare easily,& you can see different ways of preparing also.it has been changed from traditional method to different methods.each & every method is good. Rice flour ( home made) or rice is used as basic ingredient
.here in this recipe i have tried new ,which is new for me & which was told by mother,thank u mom,it came out very well.here it is...
Ingredients
Rice flour 2 cups ( home made)
Chiroti rava 1 cup
Pinch of salt
Curds or butter milk ( not too sour) 1 cup ( you can add little more)
Tempering
Oil 2 tbsp
Mustered seeda 1 tsp
Channa dal 1/2 tsp
Urad dal 1/2 tsp
Pea nuts 1 tbsp
Curry leaves
Green chillies 4-5 or as needed
Salt ( careful u will be adding for batter)
Turmeric 1/2 tsp
Others
Grated coconut 1/2 cup
Coriander leaves
Lemon juice 1 medium or as required for tanginess.
Method
Mix both rice flour & rava in a wide bowl & add water as much it soaks mix & keep overnight
next day morning mix curd or buttermilk & add little salt & mix well it should be like dosa batter
little watery. ( if butter milk is not enough you can add water)
Grease idli moulds & fill with batter & steam it for 15-20 minutes or till done.
Mean while be ready with your shavige presser greased well.
When idli is done, don't remove idli cooker from the stove let it stay there only,but make flame to sim. (See notes)
Keep one plate under the shavige maker & put one or two idlies to the cotainer & start pressing,when
u r pressing turn the plate simultaneously because it should not be lumps,
then put the ready shavige into another broad plate & sprinkle some oil so that it doesn't stick to each other.same thing do with other idlies also . Live it for cool.
Prepare tempering given under tempering & take smoothly & softly & mix the shavige otherwise it breaks,( thread)
Then add lemon juice,garnish with grated coconut & coriander leaves. & enjoy
Notes;
You can soak in morning & prepare for lunch or dinner also
If you remove idlies out and try to make shavige idli becomes cool & you cannot press it ie will be very hard to press.
Pea nuts are option
You can completely make batter using curd or butter milk
You can also make sweet version also.
In my home every one likes spicy version so i make this.
Salt adding to batter is optional
