AVIAL

                                                                    ಅವಿಯಲ್

Avial is very famous keralian side dish, it is little bit similar to south indian ( karnataka) majjige huli,but in majjige huli we use only one vegetable but in avial we use many vegetables , it is very tasty dish with few ingrediants & many vegetables  & they use coconut oil,i got this recipe in one of the blog  so i tried...
Ingredients

Vegetables 2 cups
Thick curd 1/2-3/4 cup ( without lumps & depends on sourness & consistancy)
(I used beans,carrot,broad beans,peas,colcosia,)
Salt
Turmeric powder
Curry leaves


For grinding

Grated coconut 1/2 cup
Green chillies 4-5 ( as per spicy)
Jeera 1/2 tsp

Seasoning
Oil / ghee 1 tbsp ( in original recipe coconut oil is used)
Mustered seeds 1 tsp
Jeera 1/2 tsp

Method

Cook all vegetables & keep ready ( you can cook on stove top directly )

In a vessel make seasoning & add cooked vegetables & stir,

Mean while grind the things given under for grinding

Add the grinded mixture to the vegetables & stir & add little water ( not too thick consistency) ( some like very thick consistency,here i made pouring consistency)  & add salt,jaggary very little ( optional)
& mix then add curry leaves & live to boil until the raw smell disappears & nice aroma comes out,remove from fire.

After few minutes add curd & mix throughly.

Serve with rice or chapathi,rotti,dosa,idli......enjoy.
