KHARA BUNS OR SPICY BUNS

Khara buns or spicy buns are very famous ,usually it is famous by iyengari bakery khara buns,i love very much,after coming to bangkok i missed so many bakery items so i learnt to prepare this @ home,this recipe i got from one if the blog while i was searching about this & immediately i tried it came out very well & tasty i agree it is little time consuming but when finished product comes out ho'you feel proud that you did it. Here it is ....



Ingredients
1 ½ cups a.p.f plus 2-3 tb sp for   kneading     ⅓ cup chopped coriander 
1 ½ tsp active dry yeast       1 spring finely chopped curry          Leaves
¼ cup milk          1 tsp cumin seeds
½ cup water          1 tsp oil
1 ½ tsp sugar          as per taste salt
2 tbsp butter
1 tsp salt / more       OTHER INGREDIANTS
FOR MASALA      1 tsp tillseeds to garnish buns
¼ cup/more finely chopped onions      1 tbsp milk to brush the buns
5 - 6 or more green chillies       1 tbsp butter to brush the buns
 Method
Step 1In a wide bowl mix flour,water,milk ( should be in room temp) salt sugar,butter & lastly yeast ( it should be instant yeast). & mix throughly


Step 2Mean while make curry from chopped onions etc & keep aside to come to room temp


Step 3Now put some flour on clean surface or kitchen counter & knead the dough for 10-12 min until it is non sticky


Step 4Then roll it Ie., make it wide round shape & keep the mixture which is ready inside & cover it & knead it again for 5-8 mins or until mixture is well incorporated in the dough.

Step 5Then grease a bowl & keep the dough to proof for 1 hr in a warm place

Step 6After one hr take out the dough & punch to remove the air & knead again for 5-8 mins

Step 7The make equal size balls & shape like buns & arrange on greased or floured or on butter paper on baking tray living gap in between & cover & again allow to proof for 45 min to 1 hr

Step 8Before baking pre heat the oven @ 200 dig for 10 mins

Step 9Then make into 180 dig cent & bake buns for 15-18 mins until the buns turns golden brown

Step 10Before that brush all buns with milk & sprinkle tillseeds & bake

Step 11After taking out of the oven brush with butter this makes buns soft.

Step 12Serve with tea or coffee & enjoy.
