APPAM


Appam this is kerala dish ,it is like dosa but preparation is completely different & where coconut milk ,yeast or soda is used ,you can make instant appam too,but this is also very good & preparation is also easy but here this appam is prepared by using pan which is little deep in centre .

Ingrediants;

2 cups of rice ( you can use raw rice & parboiled rice) or only raw rice as i used.
1 tsp of fenugreek seeds
1or 2 tbsp of poha ( optional)
Salt
1/4 cup or little more of coconut milk
Pinch of sugar
2&1/2 tbsp of urad dal
Cooking soda 1/2 tsp

Method;

1. Soak all Ingrediants for 4-5 hrs & grind into smooth batter & keep to ferment overnight.

2. Next day add salt,sugar,coconut milk & soda & mix well & keep aside for 10 minutes.

3. Heat appam pan & brush with little oil with a cut potato & pour the batter ( it should be like dosa batter not too thin or thick) in centre & hold the handels & turn the pan around for 2-3 times that whole pan coats with batter thinly.( remaining batter settels in centre)

4. Cook by covering on medium high flame until edges starts turning golden brown & starts to leave edges.

5. Remove & serve hot with any side you like.
