VEGITABLE BIRYANI


Vegitable biryani is very easy & tasty dish which you can cook in one go in pressure cooker,actually before trying this biryani by reading this biryani name i was thinking it was only non veg,😀 but after i got so many vegitable biryani where only veggies are used &  i felt happy & tried this dish.

Ingrediants

1. 1 cup of basmathi rice washed & soaked in water for few minutes.

2. Vegitables like carrot,peas,beans,capsicum etc., as you wish 1/2 to 3/4 cup

3. Onion chopped 1 medium large

4. 1/2 tsp of ginger garlic paste

5. Salt as per taste

6. Pinch of sugar for taste

7. 1 tsp or as per spicy red chilli powder

8. 1/2 tsp of garam masala powder

9. 1/2 tsp of coriender powder

10. Coriander leaves finely chopped

11. Kasuri methi little

12. Cashews few

13. 1 tbsp oil & ghee both

14. Sha jeera 1/2 to 1 tsp

15. Bay leaf 1 or 2

16. 1" of cinnamon

17 1 or 2 cloves

18. 1 star anise

19 1 cardamom pod

Method;

1. Heat oil & ghee in a pressure cooker & add jeera & fry when it splutters add bay leaf,cardamom,cinamon,& elachi & fry ,until nice aroma comes out.

2. Now add ginger garlic padte & fry & add chopped onions & fry until it changes its colour .

3. Now add chopped veggies & fry on medium high flame stiring continuously other wise vegitables may burn .

4. After veggies are 1/2 cooked add soaked basmathi rice & mix & fry for few minutes & now add salt,sugar,red chilli powder,coriender powder & garam masala powder & mix well

5. Now add 2 cups and little more water & add turmeric powder  & mix well & close the lid & cook under medium flame for three whistles.

6. Cool & remove the lid & leave it cool for few minutes & mix once again & check salt again before serving.

7. Serve hot with any side like dal or raita.

Note;
I forgot to mention to add green chilli add 2 slitted green chilli & also 1/4 tsp of turmeric powder.
