OTTU SHAVIGE

Ottu shavige u can call it as noodles or rice noodles or iddeappam in malayalam,it is very tasty but time consuming to prepare,but at the end sure you will like ,normally in those days my grandmom & all were preparing frequantly,that too for too many people happily serving,now a days we don't take pain to prepare & we bring from store & eat & try to satisfy ourselves,normally my mom prepares no loves to prepare shavige often even me also like to prepare at home home only & had not brought from outside till now.and this ottu shavige normally prepared only by using rice & there are many ways to prepare this but as i know from my grand moms time they used to clean rice & they would dry that & make powder that is rice flour we call in kannada as toleda akki hittu & would prepare from that but now time has been changed we people want as much as easy work so everything has been changed here like that only one easy method shere i leRnt from my mother i have made....

Ingrediants;
Raw rice or dosa rice 3 cups
Poha thick variety 1 cup

For seasoining;

2 tbsp oil
1 tbsp mustered seeds
1 tbsp chana dal
1 tsp urad dal
2 tbsp peanuts
Few curry leaves
Coriander leaves
12-15 finely chopped green chillies
3-4 lemons squeeze & keep the juice ready
1/4 tsp turmeric powder
Salt as per taste
Little sugar.

Method;

1. Soak rice & poha in morning or over night.

2. Eveining or next day ( if you have soaked over night) grind by adding sufficiant water to smooth batter ( the consistsncyy should be little watery)

3. Leave it covered by adding little salt for few minutes or 1/2 hour.

4. Steam pouring the batter into idli moulds ( make as usual idlies) for 10-12 minutes or until done.

5. Next take shavige maker & start making shavige.

6. Don't switch off the flame let it be in sim let the idli cooker be on the flame do not take out of flame.becaz otherwise you cant press it easily if tge idlies be ome cold it will become little hard to press.

7. Take out one plate at a time & take idlies out & put into shavige maker hole & try to press it it comes out like noodles & remove & keep aside.like this only repeat the same method for remaining idlies.

8. When you keep in other plate sprinkle little oil on each plate of noidles that they dont stick to each other.

9. Now we make seasoining ; in a oan heat oil & add all items given under seasoning & fry until done then take noodles one by one plate & pour little tadka & add salt,sugar & lemon juice & grated coconut & coriender leaves & mix very gently & slowly that the noodles not break,( this seasoning should be done when noodles are completely cool) in the same way prepare remaining noodles & keep.

10 here one thing i want to say is keep a plate under the shavige maker or presser & make,but dont over load make one plate of idlies on one go & remove that plate & sprinkle little oil & keep adide & take another plate & again same thing repeat.

11. You can serve immediately.
