KHARA SEV / OMPUDI

Prep., time 5 minutes
Frying 2-3 minutes
Khara sev or spicy mixture,it is deep fried noodles using gram flour,it is very crispy & crunchy & tasty snack,served plain with coffee or tea or seasoned  with peanuts,curry
leaves etc.,.& it can also used for making sev poori,it is very easy to make.


Ingredients;
1 cup gram flour ( kadale hittu)
1/2 cup rice flour ( akki hittu)
Salt as needed
1-2 tbsp hot oil
1 tbsp butter
1 tbsp ajwain ( snauf-omam)
Turmeric powder 1/4 tsp
Oil for deep frying

Method;
1. In a wide bowl sieve both gram flour &  rice flour & add salt & ajwain ( you can dry roast & powder & add it to the flour) ( here i have put whole because ajwain which i had was very small or tiny) & mix well then add butter & hot oil & mix & add little by little water & make a soft dough which you can press easily in chakli maker.

2. Keep aside for few minutes.

3. Meanwhile heat oil for deep frying & keep ready the chakli maker with the disc in which you make sev & oil drainer ready.

4. Now fill the dough & cover with the lid & start pressing directly to the hot oil,be careful while pressing keep your hand little high & press & keep the flame to medium.

5. Fry the sev until crisp & golden brown & remove from oil & remove extra oil.

6. Do same with remaining dough.

7. Store in air tight container.

8. Here you can use it as plain sev or you can make khara sev which i have made.

9. Recipe for khara sev:

10. Heat 1 tbsp oil & add 1/4 cup of groundnuts,curry leaves 1 spring, & thinly chopped dry coconut & dry red chilli & fry until crisp & break the sev into medium pieces & add the roasted things & mix & serve.
