TOMATO KOLAMBU


Prep time 15 minutes.                             ಟೊಮೇಟೊ ಕೂಲಂ ಬು

This dish is from chattinadu ,( south of Tamilnadu) ,they call it as chettinadu Takkali Kolambu,this kolambu is thick gravy sauce like where included with vegetables,in this kolambu main vegetable used is tomato with grinded fresh gravy,this is served with plain rice or any other dishes as accompaniment.it is easy & tasty dish.

Things to be used

2-3 medium tomatoes
Salt
Sugar or jaggery for taste

For masala

Onion ½  cup
Coconut – ¾ cup plus 2 tbsp
Roasted Channa Dal  1 tbsp
Coriander Seeds  2 tbsp
Cumin Seeds  1 tsp
Dry Red Chilli 2 to 3or according to spicy
Oil – 1 tsp


For seasoning 
Ghee– 1 tbsp
Mustard Seeds 1tsp
Curry leaves – 1 spring

Method

1. Heat a pan add little oil & roast things given under masala & grind & keep

2. In a vessel add ghee & heat,then add mustered seeds when it crackles add curry leaves & add tomatoes & put salt & sugar/jaggery & mix & live it ti cook until it becomes soft.

3. Then add grinded mixture & mix,add turmeric powder & continue to boil for another 2-3 minutes or until rawness disappears.adjust the consistency i f needed add water .

4. Remove & garnish with coriander leaves

5. Serve hot. 
 
Note; remember that you have added salt & jaggery before only.
          If you want more tanginess you can add tamarind paste or water.
          This gravy is not too thick or not too thin
