PUNJABI KADHI PAKORA


                                                        ಪಂಜಾಬಿ ಕಡಿ ಪಕೋರ
As the name says this is Punjabi dish,this is very famous dish in Punjabi cuisine,where pakoras or
pakodas made by gram flour & deep fried & immersed in kadhi means buttermilk ( masala ) this is very tasty dish which can be served like that only or with rice,roti etc.. As side dish,  making of this dish is quite easy but consumes little time.

Ingredients:

For pakora;

1 cup besan ( gram flour)
Coriander leaves little
Pinch of turmeric powder
Pinch of baking soda
1 tsp cumin seeds ( jeera)
3-4 finely chopped green chillies
Salt as per taste
Oil for deep frying

For the Kadhi;

2 cups curds beaten
2 tbsp besan ( gram flour)
Pinch of turmeric
Salt

For tadka;
1/2" cinnamon
2 cloves
2-3 dry red chilli
1/2 tsp jeera
1/4 tsp methi seeds
2 tsp grated ginger
Curry leaves one string
1 tsp red chilli powder
For garnishing kasoori methi & coriander leaves

Method
a) Pakora/pakoda;

1. Keep oil for heat for deep frying

2. Mix all things given under for pakoras & mix to soft pakoda dough & keep ready.

3. Make small balls from dough & deep fry in the oil until crisp & golden brown,& keep ( remove extra oil)

b) making of Kadhi;

1. Mix curds,besan,turmeric & salt in a wide bowl,add 2 cups of water ( you can add little more)

2. Bring to boil

3. In another pan heat oil & add tadka things and fry for few minutes.

4. Pour the tadka on the boiling kadhi & mix,check the consestancy ,( this batter will not be too thick ,it will be little wattery means pouring consistancy )live to boil for few more minutes,the rawness should disappear.

5. Remove from flame & add fried pakoras & garnish with kasuri methi & corinder leaves.

6. Enjoy with rice,rotis etc.....

Note; you can also make regular pakodas by adding onions.
