Potato kurma as the name itself says the main ingredient used is potato blended with curd & spices,this is also one of the north indian dish,were served with roti,chapathi,dosa etc...here i made this as side for dosa.it is very tasty & very easy to make dish.normally everyone like this.....
Ingredients
Boiled potatoes 2 big size i have used
Chopped tomato 1 big size
Onion chopped 2 medium
Salt as per taste
Sugar ( optional) little for taste
For tadka
Oil 1 tbsp
Jeera 1 tsp
Bay leaf 1
Cloves 2-3
Cinnamon 1"
Star anise 1 small
Cardamom 1 pod
Turmeric powder 1/4 tsp
Green chillies slitted 2-3
Other spices/ powders
Garam masala powder 3/4 tsp
Red chilli powder 1 tsp
Others
Curd 1 cup or little more ( add water & make it little thin without lumps)
Kasuri methi 1/2 tsp crushed
Coriander leaves for garnishing
Method
1. Boil potatoes & chop it and keep ready
2. Heat oil & add things given under tadka & fry.
3. Next add green chillies & fry & add chopped onions & fry until it changes its colour
4. Then add chopped tomatoes & fry until soft
5. Add other spices/powders & mix
6. Add cooked & chopped potatoes & mix well
7. Add curds,salt & sugar & mix well & live it to boil for few minutes ( if you want add little water if the gravy is very thick)
8. Remove & garnish with kasuri methi & coriander leaves
9. Serve with paratha,roti etc..... Enjoy.
