KASHMIRI PULAO


                                                                 ಕಾಶ್ಮೀರಿ ಪುಲಾವ್

This rice dish is from Kashmir one of the beautiful place in our India,this dish also like beautiful nature of Kashmir where both dry fruits & fresh fruits are mixed in the rice,this rice is aromatic & mild taste & easy to prepare .usually,some people don't add fresh fruits they only add dry fruits but here i have used both it is optional,but i think kashmiri people use both,& if you add both it will very good & different kind of taste where no spicy & has little sweetness & aroma of spices.

Ingredients

1 cup basmathi rice soaked in water for 15-20 minutes

Dry spices forseasoning:

1 small inch of cinnamon
1/2 tsp of shahjeera or normal jeera
1 bay leaf
2 cloves
2-3 green chillies slitted ( optional)
1 black cardamom ( if u don't have no worry)
2 green cardamom outer cover opened ( add whole)
1/2 tsp ginger powder
1/2 tsp fennal seeds or powder ( saunf)
Pinch of saffron ( if you like little darker you can add little more)
2 tbsp ghee
Salt as required

Others
Dry fruits;
Cashews 1 tsp
Badam 1 tsp
Raisins 1 tsp
Pista 1 tsp
Finely blanched & roasted in ghee

Fresh fruits:
Pine apple
Grapes
Apple
Pomogranate
Finely cut & used for garnishing at the end ( here you can use on your own)
Onion 2 tbsp or more cut in length wise & deep fried in oil or ghee or fried in ghee until little golden colour & crisp & used for garnishing @ the end ( optional)

Method

1. Cook basmathi rice & keep ready

2. In a pan heat ghee & add all spices given & fry until nice aroma comes out.

3. Add saffron colour & mix

4. Add cooked rice & mix well.add salt & mix.

5. Remove from fire,

6. In another pan heat ghee & fry all dry fruits & remove & keep.

7. In the remaining ghee add onion & fry ( if you want you can add more ghee or oil & fry) until golden brown & crisp.

8. Garnish pulao with onion,roasted nuts & cut fruits.

9. Serve with any raita & enjoy.

10. Notes; another method of cooking is; firstly make seasoning & then add rice & salt & mix then add water & cook ( 1:2) u can cook in pressure cooker also otherwise in open pot directly.which ever is convenient for you.
