ಸಿಹಿ ಕುಂಬಳಕಾಯಿ ರೊಟ್ಟಿ
Sihikumbalakai means sweet pumpkin or yellow pumpkin, usually everyone prepare many types of dishes from this vegetable,here i have prepared rotti,i know you are surprised!!!, yes i have.....:-)
Actually,this rotti is prepared in my native place,i learnt it from my Ajji & my Amma,i love....this rotti very much,even my daughter likes it,in beginning when first time i made this rotti my husband was not so much impressed nut now he is ok ;-) . This is very simple dish which can be prepared very easily with limited ingredients,actually my mom & ajji only use pumpkin gratings & redchilli powder & grated coconut & make very simple rotti,even i was following that but this time i thought to add some mire things to it so,here is the recipe......
Ingredients:
1 cup rice flour
3/4-1 cup grated sihikumbalakai/ sweet pumpkin
Salt as needed
1/2 cup grated coconut
1 tsp red chilli powder
1/2 tsp jeera
1 tbsp finely chopped coriander leaves
1 tbsp finely chopped curry leaves
1 tbsp hot oil
Water as needed for making dough
Method:
1. Grate sweet pumpkin in a grater & keep
2. In a bowl take rice flour & all other ingredients given With grated pumpkin & mix well,then add oil & mix ,it should be like bread crumbs.
3. Then add little by little water & make soft dough,it should be soft such that you can easily spread on tava.cover & keep aside for 15 minutes.
4. Take a plate or tava or pan & grease it with little oil,& take a medium size ball of dough & spread on the plate/tava/pan thinly asmuch as you can.
5. Sprinkle some oil on the top of rotti & cook both the side until dark brown spots appear or until done.
6. If you want more crisp cook on medium low flame.
7. Remove & serve hot accompanied with any side.
