VARHADI ALOO BHAT

                                                                  ವರಾಡಿ ಅಲೂ ಭಾತ್
Friends,as you know i am trying Himachal Pradesh dishes,so here is another recipe for you all this is kashmiri dish ,'varhadi aloo bhath',this is also yogurt base rice,normally,you can see dishesfrom that   cuisine .are mainly includes yogurt.this is rice bhath  in which only potato as vegetable used here.it is easy & tasty dish....
Ingredients

Rice 1 cup
Medium potatoes 3cubed
Cashews broken 1 tbsp
Yogurt whisked 1 cup

For grinding

Cinnamon 1 "
Ginger 1/2 tsp
Coriander seeds  3-4 tsp
Turmeric 1 tsp
Green chillies 3-4 or as per spicy
Dry coconut 1 tbsp

Others
Salt as per taste
Ghee 1&1/2 tbsp
Coriander leaves for garnishing
Dry copra 1 tbsp for garnishing

Method
                                 Grind the things given under grinding to smooth paste
                                                                   
                              Heat little ghee & fry cashews till golden brown & keep aside

In same pan add little more ghee ( please distribute given amount of ghee) & fry cubed potatoes until
little   soft & crunchy  & keep aside.


Heat remaining ghee & fry grinded paste until raw smell goes & water evaporates,,


Then add potatoes & yogurt & mix well & add rice & salt & little sugar ( optional) & mix well & add 1&1/2 to 2 cups water ( depends on rice you are using) ( remember you have added yogurt also)& mix & cover & cook on medium flame,be stirring in between otherwise rice will burn in bottom .


When rice cooked completely remove from fire & garnish with roasted cashews & coriander leaves.



Serve hot with onion raita.

Notes:
While adding water to cook rice please remember that you have added  yogurt.

You can cook rice separately & add to the gravy you prepared.
