It is very healthy & tasty curry.let us try to learn what all benefits of this veggie,: this vegetable is rich in antioxidants & vitamins.this easily you can grow in your back yard,actually in my in-laws place they were growing this...& it contains vitamin A,& it is less in calories.it is good source of B- complex,it helps to protect age related macular disease.it is also rich in source of minarals,even its seeds are very healthy & contains dietary fiber...........
So now we shall move on to our recipe....
Ingredients:
1 cup of sweet pumpkin ( chopped not too thick or thin)
For seasoning:
1 tbsp of oil
1/2 tsp mustered seeds
1/4 tsp of chanadal
1/4 tsp of uraddal
2-3 green chilli ( finely chopped)
Few curry leaves
Others:
Salt as per taste
Pinch of sugar for taste
1 tbsp of lemon juice
2 tbsp of grated coconut
Coriander leaves for garnishing
Method:
1. Firstly chop pumpkin into medium square pieces & keep
2. In a pan heat oil & add all seasonings & fry for few seconds,& add cut pumpkin pieces & mix well & sprinkle some water ( not too much water otherwise it becomes mushy)& mix & cook on low flame until it becomes semi soft.
3. Now add salt,sugar,lemon juice & mix.
4. Lastly add grated coconut & coriander leaves & garnish.
5. Serve with dosa,chapathi,rice.......
