PUNJABI VEGETABLE PULAO


                                                                ಪಂಜಾಬಿ ವೆಜಿಟಬಲ್ ಪುಲಾವ್
This dish is basically from north india Punjab,it is very easy & very tasty dish,even kids love this,very minimum ingredients used,& i used very less vegetables also which i had in my
pantry,actually,here i made this in electric rice cooker,if you don't have electric cooker no worry you can make in normal pressure cooker or you can make it directly on stove top.so friends let us start...


Things  needed

1cup rice ( basmathi or long rice)
1/2 -3/4 cup cut vegetables ( here u can use any,but i have used only onion,capsicum,peas,& carrit)
Saffron strands 2-3 ( soaked in warm milk) ( you can also use food color also)
Bay leaf 1
Turmeric powder 1 pinch
Green chilli 3-4
Garam masala 1/2 tsp ( if you want more flavour u can add)
Salt as needed
Ghee & oil both together 1 tbsp
Coriander leaves for garnishing
Sugar little ( optional)
Red chilli powder ( optional)

Method

In apan heat ghee & oil,& add bay leaf & green chilli fry then add onion & fry until transparent .then add carrot & fry until 1/2 coo & add capsicum & peas ( i used frozen) & cook  half then add rice ( soaked in water for 10 minutes) & fry then add salt,garam masala,sugar,turmeric powder & red chilli powder ( if using) then pour into electric cooker & add water (1:2 usual if you are making in pressure cooker & 1:2&1/2 to 3 cups for electric rice cooker) & add saffron colour & mix well & cook until done may be 15 minutes.then mix again









Garnish with coriander leaves & roasted  cashews

Enjoy hot hot punjabi vegetable pulao with raita or any side,here i made another punjabi dish that is
arhar dal.
