Cucumber is very healthy vegetable,from this you can make salads,raita,sambar etc., the dishes prepared are very tasty & healthy too.i like cucumber very much,to eat raw.health benefits of cucumber are,it is known as one of the best vegetable for our body's overall health,it is big source of vitamin B,good for skin & hairs,it fights against cancer,relieves bad breath,aids in weight loss & good for digestion,reduces cholesterol,controls blood pressure etc.,it is very cool to body..here i have posted cucumber stew or kootu which goes with rice or served as side dish....
Ingredients
1 cup chopped cucumber
1/4 cup of moong dal
Turmeric powder 1/4 tsp
Salt as per taste
Jaggary( optional)
Seasoning
Ghee/oil 1 tbsp
Mustered seeds 1 tsp
Dry red chillies 1-2 broken
Curry leaves few
For grinding to masala
1/2 cup grated coconut
1 tsp jeera
1tsp black pepper ( you can add 1/2 tsp more)
Others
Coriander leaves for garnishing
Cut cucumber & keep ready & cook moong dal
Grated coconut,pepper,jeera for grinding
Grind into paste
Make seasoning & bring moongdal,cucumber,& masala to boil.
Add salt & jaggary & boil & garnish with coriender leaves.
Method
Cook moong dal in cooker until soft & remove & mash it & keep ready
Cook cucumber separately in water until soft
Grind to smooth paste given under for masala
Heat ghee/oil in a vessel & add mustered seeds,dry red chillies & curry leaves & fry,
Add cooked moongdal & cucumber & mix then add grinded masala & bring to boil,if water is needed you can add.next add salt,jaggary & boil for few more minutes & remove from fire.
Garnish with coriander leaves & serve with hot rice or serve as side for rotti,dosa,idli etc.
Enjoy.
Notes: if you want you can add lemon juice for tangyness.
