CASHEW BUTTER COOKIES


                                                            ಗೋಡಂಬಿ ಬೆಣ್ಣೆ ಬಿಸ್ಕತ್ತು
Prep.,time 10 minutes
Baking time 18 minutes or till done.


This is eggless cookies,made by using wheat flour & butter & sugar.this is very simple recipe,& very easy to prepare & also very tasty.as i had cashews leftover in my jar,so i was thinking of what to do,i was boring to do same cashew burfi again,& usually, we garnish in each and every sweet dish,then also i had more cashews so i got this recipe & tried it out.it came out very well.mine was little crispy,because may be i pre-heated the oven for 10 minutes & next baked as given in the recipe.so it was little crispy,but you can reduse your preheating time & bake as regular.but taste is very good believe me :-)

Things to be used;
1cup wheat flour
1/2 cup powdered sugar
1/2 cup butter @ room temp.,
1 tsp vanilla extract
1/2 cup roasted & coarsly powdered cashews
Milk 1-2 tbsp or as needed
Pinch of salt

Method;
1. Pre-heat the oven for 180 deg cent.,for 5 minutes

2. Roast cashews on medium flame without burning ( u can roast in microwave too) & powder coarsely

3. In a bowl mix sugar ( powdered) & butter till creamy.& add vanilla essence & mix.

4. Then add wheat flour & powdered cashew & mix well.then add milk & knead it into soft dough( texture should be little soft than other cookies)

5. Grease a baking tray,& make equal size of balls & press by palms little & arrange it on tray living 1/2 " distance.

6. Now bake in pre-heated oven for 18 minutes or it starts turning golden brown.( do not worry if it is little soft,because it will be soft little,after cooling it comes to normal condition)

7. Remove & keep on wire rack & live to cool completely.

8. Store in airtight box. ( 20-25 cookies will be done)
