To day actually , one of my friend posted ready made ragi shavige ( vermicelli) recipe , i was temted by seeing that,& felt to prepare,i din't know that we get readymade ragi vermicelli like rice vermicelli in store,& i like all dishes prepared by using ragi,& it is very very healthy also.so i did not have ready made vermicelli,so i was very much sad thinking 'chey' suddenly FLASHED in my mind that why not i can try with ragi flour itself,so then i started ,here is the recipe...
Ingredients
Ragi flour 1 cup
Water 1&3/4 cup
Salt little
Oil 1 tbsp
For tempering
Oil 1 tsp
Mustered seeds 1 tsp
Channa dal 1/2 tsp
Urad dal 1/2 tsp
Peanuts 1 tbsp
Curry leaves a string
Green chilli 3-4 ( as per spicy)
Turmeric powder 1/4 tsp
Lemon juice 2 tbsp
Salt ( remember that you have added salt to dough also)
For garnishing
Grated coconut 1/4 cup
Coriander leaves
Method
Keep water for boiling & add salt & oil ( this method is like how you prepare ragi mudde)
when it starts boiling add ragi flour in centre & close a lid & cook for 3-5 minutes,then take
a wooden spatula or stick & mix vigoursely until it starts to form a dough,then remove from fire & mix quickly that there should be no lumps at all.
Now take the dough on a plate & knead it until smooth & stiff dough,
Then take shavige maker or chakli maker ( here i used chakli maker)with small holes & fill with dough & press on greased idli moulds or plate & steam cook for 15 minutes or until done.
Then remove the plates & keep for cooling,( without cooling when you mix it breaks)
mean while prepare tempering & take in a bowl & start mixing slowly & softly,( usually my
mom prepares like that , she says if u mix slowly the thread consistency will not break)
Lastly,garnish with coconut ( fresh) & coriander leaves.
Enjoy this healthy ragi flour ottu shavige.
