EGGLESS COCONUT CAKE


Coconut cake ,eggless coconut cake which is very yummy & easy to prepare,i had left over coconut in refrigerator so thought of trying this recipe & got one recipe from a blog and tried to make this ,yes it came out very well & tasty.it is here.......

Ingrediants;
1&1/4 cup of maida
3/4 cup of sugar powdered or granulated sugar
1/2 cup of butter
1 tsp of baking powder
1/2 tsp of baking soda
1/2 cup of milk @ temperature
1/2 cup of curd @ temperature
1 tsp vanila extract
3/4 cup of grated coconut
1 tbsp of cashews & badam both broken into small peaces

For frosting;
I used ready cream
1&1/2 tbsp of butter
5-6 tbsp of icing sugar
1/4 cup of coconut flakes

Method;

1. Pre heat the oven for 8- 10 minutes .

2. Sift flour,baking powder,baking soda in a bowl & keep ready.

3. In another bowl cream both butter & sugar finely & add vanila extract & mix then add curds & milk & mix well.

4. Now add flour little by little & mix & lastly add grated coconut & mix & also add nuts & mix gently,do not over mix.

5. Grease a cake pan & dust with flour & pour the batter & tap and make it even.

6. Bake in pre heated oven for firstly,15 minutes & then cover the cake pan with aluminium foil & bake for another 30 minutes,toatally 45 minutes.( becaz the coconut cake will become brown quickly so after 15 minutes cover with the foil)

7. Bake until done  or insert a tooth pick if it comes out clean then it is done.

8. Remove from oven and cool completly before frosting.

9. Beat butter & icing sugar until creamy & spread over cake & sprinkle coconut flakes.

10. Cut & serve.
